At the end of April, Sushi Adachi celebrated its one-year anniversary.
Located at 668 Barber Lane in Milpitas, Sushi Adachi is an authentic Japanese restaurant, founded by Eriko Nishizawa and Ken Nishizawa.
The cozy spot boasts a warm, inviting ambience and offers platters of fresh, flavorful sushi. Their specialties are nigiri, makizushi, and sake.
The fish in all of their dishes comes directly from Japan, and every single one is chosen personally by Partner and Master Chef Adachi Keiichi. Through a method known as flash freezing, the restaurant is able to offer high-quality ingredients that taste unbelievably fresh.
The Beat had an opportunity to interview Eriko Nishizawa to learn more about their unique restaurant and their passion for sourcing the finest and freshest ingredients…

Eriko’s father started a restaurant in Hong Kong 11 years ago. It was a huge success, so they decided to open Sushi Adachi in Milpitas.
“We decided to open the restaurant here because I love the Bay Area. I love the culture, the people, the weather,” said Eriko.

Recently, Sushi Adachi hired Chef Mikkio Ando, who has worked as a top chef at restaurants in Los Angeles and San Francisco.
“She finally joined us,” said Eriko. “We’re happy to have her here, making beautiful sushi with us.”
Chef Ando is thrilled to be in Milpitas, working to forward Sushi Adachi’s mission of bringing authentic Japanese cuisine to the region.
“At Sushi Adachi, we let freshness, creativity, and love drive our mission to success. Embracing these values in every creation for a promising future,” remarked Chef Ando in a recent release.
Eriko truly believes that the uniqueness of Sushi Adachi can be found in their authenticity. Eriko spoke of how committed they are to only bringing in the best fish from Japan to ensure that customers have an exceptional culinary experience.
“We care about all the details,” said Eriko. “We never compromise. We want to provide all the best to our customers.”
There are plans to open a second location in Mountain View next year.
